
Avo & Tomato Toast
Apr 01, 2021The ultimate breakfast toast. This is one of my go-to breakfasts for the weekend because it's perfect for late-morning. After sleeping in for several hours more than I do during the work week I wake up hungry and craving something hearty.
Avocados are a good breakfast addition because of their ability to provide energy along with a number of essential vitamins and minerals. They're naturally low in sugar and a great source of monounsaturated fatty acids (aka the good fats)
In this recipe I love the drizzle of honey and crushed red pepper combo - it's the perfect sweet & spicy duo to give your avo that extra umpf.
I like to pair the toast with an egg on the side, usually poached or fried - but scrambled or hard boiled would do the trick as well.

INGREDIENTS:
1 small avocado
1/2 lime
8-10 cherry tomatoes
2 slices sprouted grain bread
Pink Himalayan salt / cracked black pepper
Red pepper flakes
1 tsp. raw honey (optional)
HOW TO:
- Mash avocado in a small bowl. I like to leave the texture creamy enough to spread but still a bit chunky.
- Squeeze juice of half a lime over the avocado and season with salt and pepper.
- Slice the tomatoes into halves or quarters and throw them into a pan on med-high heat with some olive oil and a pinch of salt.
- While the tomatoes are warming up, toast the bread.
- Spread mashed avocado mixture on the toast and sprinkle with red pepper flakes.
- Drizzle the honey over top, and top with the warm tomatoes.
- Add a fried or poached egg on the side and a bed of spinach for a complete breakfast!
